Thakali cuisine, originating from the Thak Khola region of Mustang, is widely considered the most refined form of dal bhat in Nepal. The Thakali people, historically traders along the salt route between Tibet and India, developed a cuisine that blends Tibetan and lowland Indian influences.

A Thakali thali includes: steamed rice, dal (often with the distinctive Himalayan spice timur/Sichuan pepper), a meat curry (typically mutton or chicken), seasonal vegetables, gundruk (fermented leafy greens), tomato achar, and pickle. The use of timur gives Thakali food its signature numbing-spicy kick.

Thakali restaurants (Thakali Bhanchha Ghar) are found throughout Nepal and are considered premium dal bhat establishments. On the Annapurna Circuit and Jomsom treks, you're in Thakali heartland — the food is exceptional.
