Chatamari is a Newari rice flour crepe that has earned the nickname 'Nepali pizza' — though it's entirely its own thing. A thin rice flour batter is spread on a hot skillet and topped with minced buffalo (or chicken), egg, chopped onions, and green chilies, then cooked until the base is crispy.
Traditionally a festive food served during Newari celebrations and feast days, chatamari has increasingly become available as everyday street food. The vegetarian version uses just egg and vegetables. Some modern restaurants have created fusion versions, but the classic meat-and-egg chatamari from a Newari kitchen is hard to beat.
The texture combination is addictive: crispy rice flour base, savory minced meat, and a slightly runny egg on top. Served hot from the pan with a tomato achar on the side, it's one of the most satisfying snacks in the Kathmandu Valley.
